The idea for this blog germinated when my oldest daughter, a college student who no longer was on the college meal plan, called me in a panic from the grocery store. “Mom! I’m at the grocery store. What can I make that’s healthy and not too hard to cook?”
College students in particular have special needs. They may or may not have access to a variety of cooking tools and utensils. They generally don’t have a lot of money to spend on esoteric ingredients that they may use one time. Their skill level may be non-existent, depending on how much exposure they had to the kitchen before moving out. And they usually don’t want to spend too much time fussing over the stove – they just want to eat.
In this blog, you’ll find recipes that are tasty (I’ve made them all!), mostly low-fuss, and healthy. You don’t need to subsist on ramen noodles and mac ‘n cheese if you don’t want to!
